  • Preheat your smoker to 225°F using hickory or oak wood.
  • Rinse the pork shoulder with cold water and pat dry with paper towels.
  • Apply a generous amount of Revolution Barbecue North Carolina BBQ Rub all over the pork shoulder, rubbing it into the meat. Make sure to get into all the nooks and crannies.
  • Place the pork shoulder in the smoker and close the lid. Smoke the pork for 6-8 hours or until it reaches an internal temperature of 165°F.
  • Once the pork reaches 165°F, lay out a double-thick layer of foil and place the pork shoulder in the middle. Fold up the sides of the foil and add the apple cider vinegar on top of the pork. Completely seal the foil and return it to the smoker.
  • Place the foil-wrapped pork shoulder back in the smoker and continue to smoke for another 4-6 hours or until the internal temperature of the pork reaches 195°F.
  • Remove the pork shoulder from the smoker and let it rest for at least 30 minutes before shredding it with two forks.
  • Pour the liquid from the foil into a fat separator and let it sit for a few minutes to allow the fat to rise to the top.
  • Carefully pour the defatted liquid back into the pulled pork and toss to combine.
  • Serve the smoked North Carolina pulled pork with a vinegar based sauce or your favorite barbecue sauce and enjoy!

Notes

Note: As the pork shoulder is larger, it may take longer to smoke and reach the desired internal temperature, so make sure to monitor the temperature regularly throughout the cooking process to ensure it’s cooked thoroughly.
