Revolution Barbecue North Carolina Ribs

I'm beyond excited to share with you my recipe for North Carolina-style spare ribs! This recipe is near and dear to my heart because it embodies the flavors and traditions of Southern BBQ, which has been a passion of mine for years.
Our North Carolina BBQ rub is made with a carefully crafted blend of spices that I've personally worked on perfecting. It's a balance of sweet and spicy flavors that just screams North Carolina-style BBQ. And when you pair it with a traditional North Carolina wood like Hickory or Oak, you get a dish that's bursting with rich, smoky flavor.
Now, I know there are many ways to cook ribs, but trust me, smoking them is the way to go. It takes a bit of patience, but the end result is well worth it. There's nothing quite like biting into a juicy, succulent spare rib that has been slowly smoked for hours.
When I think of North Carolina-style spare ribs, I can't help but get a little emotional. It's more than just a recipe, it's a representation of the rich BBQ culture and traditions that have been passed down through generations.   • Prepare the ribs by removing the membrane on the bone side and trimming any excess fat.
  • Generously apply the Revolution Barbecue North Carolina BBQ Rub to both sides of the ribs. Use your hands to rub the seasoning into the meat.
  • Preheat your smoker to 225°F and add Hickory or Oak wood
  • Place the ribs in the smoker, bone side down, and smoke for 2 hours.
  • In a small saucepan, combine the apple cider vinegar, water, yellow mustard, honey, and butter. Heat over medium heat until the butter is melted and the mixture is well combined.
  • After 2 hours, remove the ribs from the smoker and place each rack on a large piece of aluminum foil. Pour half of the sauce over each rack and wrap tightly in the foil.
  • Return the ribs to the smoker and continue smoking for an additional 2 hours.
  • After 2 hours, remove the ribs from the foil and place them back in the smoker for another 30 minutes to an hour, or until the internal temperature of the meat reaches 200°F.
  • Remove the ribs from the smoker and let them rest for 15 minutes before slicing and serving. Enjoy with additional sauce, if desired.

Notes

For a more traditional North Carolina BBQ experience, you can serve the ribs with a side of coleslaw and hushpuppies.
