Ingredients
  

  • 2 lbs ground beef
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 2 eggs beaten
  • 1/2 cup diced onion
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced red bell pepper
  • 1/4 cup Revolution Barbecue All Purpose Rub
  • 1/4 cup ketchup
  • 2 tbsp Worcestershire sauce
  • 2 tbsp brown sugar
  • 4-6 slices of bacon thin sliced bacon

Instructions
 

  • Preheat your smoker to 250°F.
  • In a large mixing bowl, combine the ground beef, breadcrumbs, milk, eggs, diced onion, diced green bell pepper, diced red bell pepper, and Revolution Barbecue All Purpose Rub. Mix everything together with your hands until well combined.
  • Form the mixture into a loaf and place it on a wire rack. Then, wrap the bacon slices around the meatloaf, tucking them underneath the loaf to hold them in place.
  • In a separate bowl, whisk together the ketchup, Worcestershire sauce, and brown sugar to make the glaze.
  • Brush the glaze generously over the entire surface of the meatloaf.
  • Place the meatloaf on the smoker and cook for 2-3 hours, or until the internal temperature reaches 160°F.
  • Remove the meatloaf from the smoker and let it rest for 10-15 minutes before slicing and serving.
