Tacos Norteños
Get ready to indulge in a meal that’s sure to satisfy all your cravings! Tacos Norteños are the perfect combination of savory and smoky flavors that will leave your taste buds begging for more. This dish features juicy flank steak, crisp bacon, and a variety of fresh vegetables and spices that come together to create a hearty and flavorful filling.
Ingredients
- 1 1/2 pounds flank steak
- 1 teaspoon Kosher salt divided
- 1 teaspoon freshly ground black pepper divided
- 8 ounces thin-cut smoked bacon cut into ¼-inch pieces
- 1 medium onion thinly sliced
- 5 garlic cloves diced
- 1/2 cup 505 Southwestern Flame Roasted Green Chiles
- 2 beefsteak or vine-ripe tomatoes diced
- 1/4 cup chopped cilantro plus leaves for serving
- 4 ounces Monterey Jack coarsely grated (about 1 cup)
- Lime wedges for serving
Instructions
- Season steak with 1/2 teaspoon each of the salt and pepper. Let sit uncovered at room temperature 1 hour.
- Cook bacon in a large cast iron skillet over medium heat, turning occasionally, until brown and crisp, 8–10 minutes. Using tongs, transfer bacon to a small bowl and save for taco filling. Pour off all but 2 Tbsp. bacon fat from skillet and set aside for making taco filling.
- Prepare a grill for medium-high heat. Grill steak about 5 minutes per side. It should be nicely browned and an instant-read thermometer registers 120° for medium-rare,. Transfer to a cutting board and let rest 10 minutes before slicing against the grain.
- Pre-heat your broiler. Meanwhile, heat the skillet with the bacon fat on the stovetop over medium-high and add onions and garlic; season with 1/2 teaspoon of salt and pepper. Cook, stirring often, until just beginning to soften, about 5 minutes.
- Add chiles and cook, stirring often, until chiles are softened and onions are golden brown, about 5 minutes. Add tomatoes and cook until tomatoes are very soft and sauce is thick like a ragù, 10–15 minutes. Mix in steak and any accumulated juices, reserved bacon, and chopped cilantro and cook another 2 minutes until fully incorporated.
- Top with cheese and broil until cheese is melted and starting to brown, about 1 minute.
- Spoon filling into warm tortillas and top with cilantro leaves. Serve with lime wedges for squeezing over.
