  • Prepare your smoker at 250 degrees Fahrenheit, using a heavy smoke wood or pellets such as oak, hickory, or mesquite.
  • Slather the rib roast with Worcestershire sauce to act as a binder for the seasoning.
  • Apply a coat of the Blak BBQ Seasoning to the entire roast, followed by a liberal rub of Texas Beef BBQ Rub on all sides of the meat.
  • Let the roast sit for one hour prior to smoking.
  • Place the rib roast on the smoker and smoke until it reaches an internal temperature of 120 degrees Fahrenheit in the middle. Approximately 2 1/2 - 3hours at 250 degrees. Use a meat thermometer to verify the temperature at the thickest part of the roast.
  • Tent the meat with aluminum foil and let it rest for at least 15 minutes. The meat will continue to rise another 5 degrees to a final internal temperature of 130 degrees Fahrenheit.
  • Slice the roast to serve and enjoy the delicious, smoky flavor of your perfectly cooked smoked prime rib.

Notes

Keep in mind that the outer edges will be more done than the middle, so your guests can choose their preferred level of doneness.
