Ingredients
  

  • 4 boneless rib eye steaks 10-12 ounces each
  • 1 1/2 tablespoons neutral oil
  • Kosher salt and freshly ground pepper to taste
  • 8 tablespoons butter
  • 4 garlic cloves smashed
  • 4 sprigs fresh rosemary
  • 4 teaspoons Revolution Barbecue Kansas City BBQ Rub

Instructions
 

Prepare the Steaks:

  • Let the steaks sit at room temperature for 20 minutes.
  • Season the steaks on both sides with salt and pepper to taste.

Preheat the Pan:

  • Heat a heavy pan, such as a cast iron skillet, over high heat.
  • Add the oil to the pan.

Sear the Steaks:

  • Place the steaks in the pan in a single layer.
  • Cook for 3-4 minutes per side or until deep golden brown.

Add Flavor:

  • Sprinkle 1/2 teaspoon of Kansas City BBQ Rub to the top side of each steak.
  • Add the butter to the pan.
  • Once melted, add the smashed garlic cloves and rosemary sprigs to the pan. Stir to combine.

Baste and Cook:

  • Spoon the butter mixture over the steaks continuously.
  • Cook the steaks for 2 minutes and then flip.
  • Add the remaining BBQ Rub to the steaks and continue to baste for another 2 minutes.

Check for Doneness:

  • Insert a probe thermometer into the thickest part of one of the steaks. Look for a temperature between 120-125 degrees F for a medium-rare steak.

Rest and Serve:

  • Once desired temperature is reached, remove the steaks from the pan.
  • Let the steaks rest for 5 minutes.
  • Spoon the pan drippings over the steak, then slice and serve immediately.
