Our quest for authentic Irish cuisine led us to Ennis Butchers, a hidden gem outside Dublin, where we met a kindred spirit in the form of a friendly butcher. Bonding over our shared love for barbecue, we exchanged stories and flavors, leaving with two exquisite Irish grass-fed steaks, a gift from the heart of the Emerald Isle.
Back at our cozy AirBnB, with limited cookware but boundless enthusiasm, we transformed these culinary treasures into a feast fit for royalty. As the aroma of sizzling steak filled the air, we knew we were creating memories to last a lifetime. Butter Basted Grass Fed Steak
Ingredients
- 4 boneless rib eye steaks 10-12 ounces each
- 1 1/2 tablespoons neutral oil
- Kosher salt and freshly ground pepper to taste
- 8 tablespoons butter
- 4 garlic cloves smashed
- 4 sprigs fresh rosemary
- 4 teaspoons Revolution Barbecue Kansas City BBQ Rub
Instructions
Prepare the Steaks:
- Let the steaks sit at room temperature for 20 minutes.
- Season the steaks on both sides with salt and pepper to taste.
Preheat the Pan:
- Heat a heavy pan, such as a cast iron skillet, over high heat.
- Add the oil to the pan.
Sear the Steaks:
- Place the steaks in the pan in a single layer.
- Cook for 3-4 minutes per side or until deep golden brown.
Add Flavor:
- Sprinkle 1/2 teaspoon of Kansas City BBQ Rub to the top side of each steak.
- Add the butter to the pan.
- Once melted, add the smashed garlic cloves and rosemary sprigs to the pan. Stir to combine.
Baste and Cook:
- Spoon the butter mixture over the steaks continuously.
- Cook the steaks for 2 minutes and then flip.
- Add the remaining BBQ Rub to the steaks and continue to baste for another 2 minutes.
Check for Doneness:
- Insert a probe thermometer into the thickest part of one of the steaks. Look for a temperature between 120-125 degrees F for a medium-rare steak.
Rest and Serve:
- Once desired temperature is reached, remove the steaks from the pan.
- Let the steaks rest for 5 minutes.
- Spoon the pan drippings over the steak, then slice and serve immediately.
