Bacon-Wrapped Jalapeno Poppers Recipe That Will Make Your Taste Buds Dance!

Bacon-Wrapped Jalapeno Poppers

This is one of my absolute favorite BBQ appetizers! Here, jalapeños are stuffed with melty cheese and then wrapped in bacon. What else do you need? For this recipe, I use a shredded Mexican cheese blend, which usually contains cheddar, Monterey Jack, asadero, and queso quesadilla cheeses.

Equipment

  • 1 Gas or Charcoal Grill

Ingredients
  

  • 8 jalapeño peppers
  • 8 ounces cream cheese at room temperature
  • ½ cup shredded Mexican cheese blend
  • 8 bacon slices halved widthwise
  • 2 tablespoons Homemade Barbecue Rub or store-bought
  • 2 tablespoons canola oil

Instructions
 

  • Preheat the grill to medium-high heat (425°F) for direct heat cooking by lighting the heat source (or piling coals) in the spot that will be directly under the food.
  • Cut off the stems of the jalapeños and halve them lengthwise. Using a teaspoon, scrape out the seeds and the white membrane. In a small bowl, combine the cream cheese and the cheese blend and mix well. Spoon equal portions of the cheese mixture into the jalapeño halves.
  • Wrap each jalapeño half with a half slice of bacon, securing it with a toothpick. (If you do not have toothpicks, make sure the ends of the bacon overlap on the bottom of the pepper, not against the cheese.) Sprinkle the rub over the wrapped poppers.
  • Put the oil on a folded paper towel and use a large pair of tongs to wipe down the grill grate with it.
  • Place the jalapeños on the grill, cheese-side down, and cook for about 6 minutes, or until the bacon gets crispy. Using long-handled tongs, carefully flip the poppers.
  • Reduce the heat to medium (350°F) and cook for 10 to 12 minutes, or until the bacon is crisp on all sides.
