Mom Pasta Sauce with Calabrian Chili

Moms Pasta Sauce with Calabrian Chili

I grew up in the Bronx with my Mom and one of my weekly favorites was her homemade pasta sauce. Not only is this sauce delicious, but it is inexpensive which came in handy in those days. This recipe can be made fairly quickly but a slow simmer over 2-3 hours really brings out the flavors of this sauce. The Calabrian Chili wasn’t in her original recipe and is something I added on later in life.

Ingredients
  

  • 2 cans 28 oz each of San Marzano tomatoes
  • 1 onion chopped
  • 4 cloves of garlic minced
  • 1/4 cup of olive oil
  • 2-3 teaspoons crushed Calabrian chili
  • 1 teaspoon dried oregano
  • 1 teaspoon white granulated sugar
  • Salt and pepper to taste

Instructions
 

  • Heat the olive oil in a large saucepan over medium heat. Add the chopped onion and sauté for about 5 minutes until the onion is translucent.
  • Add the minced garlic to the saucepan and sauté for an additional minute, being careful not to burn the garlic.
  • Add the cans of San Marzano tomatoes to the saucepan, breaking up the tomatoes with a spoon or your hands. Stir to combine.
  • Add the crushed Calabrian chili, dried oregano, and sugar to the saucepan, stirring to combine.
  • Bring the sauce to a simmer and cook for about 30 minutes, stirring occasionally.
  • Taste the sauce and add salt and pepper to taste.
  • If the sauce is too thick, you can thin it out with a little bit of water or chicken broth.
  • Once the sauce is done, you can either serve it immediately or let it cool and store it in an airtight container in the refrigerator for up to a week.

Notes

This recipe should make enough marinara sauce to serve 8 people. The touch of sugar balances out the acidity of the tomatoes and gives the sauce a slightly sweet flavor. You can serve it over your favorite pasta, or use it as a dipping sauce for bread or mozzarella sticks. Enjoy!
