Pete’s French Onion Soup

During the early 1980s in the Bronx, my stepfather had a specialty dish – French onion soup. Although my mother was a great cook, she encouraged him to make this particular dish because it was one he could cook perfectly every time. My sister, in particular, still considers it one of her favorite comfort foods.
The soup was always a hit, filling the entire house with its savory aroma as it simmered on the stove. The dish was rich, savory, and full of flavor. Even to this day, my sister still requests this recipe.
So, if you're looking for a delicious and classic French onion soup recipe, then look no further. This recipe features crispy baguette slices and melted cheese, making it the perfect dish for any occasion. Let's get started!

Ingredients
  

  • 4 large onions thinly sliced
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1 bay leaf
  • 4 cups beef broth
  • 1/2 cup dry white wine
  • 1 French baguette sliced into 1-inch rounds
  • 2 cups grated Gruyere cheese

Instructions
 

  • In a large pot or Dutch oven, heat the butter and olive oil over medium heat. Add the sliced onions and cook for 20-25 minutes, stirring occasionally, until the onions are very soft and caramelized.
  • Add the salt, black pepper, dried thyme, and bay leaf to the pot and stir to combine.
  • Pour in the beef broth and white wine, and bring the soup to a simmer. Cover and cook for 30 minutes, stirring occasionally.
  • Remove the bay leaf from the soup and discard.
  • Preheat the oven to 350°F (175°C).
  • Arrange the baguette rounds on a baking sheet and toast in the oven for 5-7 minutes, until lightly golden.
  • Ladle the soup into four oven-safe bowls. Top each bowl with a few toasted baguette rounds and sprinkle 1/2 cup of grated Gruyere cheese over the bread.
  • Place the bowls on a baking sheet and bake for 10-15 minutes, or until the cheese is melted and bubbly.
  • Remove the baking sheet from the oven and let the soup cool for a few minutes before serving. Enjoy your delicious French onion soup with a crispy baguette and melted cheese on top!

Notes

To achieve perfectly caramelized onions for your French onion soup, be sure to cook them slowly over medium-low heat for at least 20-25 minutes. This will enhance their natural sweetness and add depth of flavor to your soup.
