Polidori Sausage and Spinach Lasagna Roll-Ups
Ingredients
- Ingredients:
- 9 sheets lasagna noodles
- 4 Italian sausages casing removed
- 2 bratwurst sausages casing removed
- 1 tablespoon Olive Oil
- 24 ounces frozen spinach leaves
- 3 garlic cloves minced
- 1 1/2 cups mozzarella cheese grated
- Jar of pasta sauce or homemade sauce
Instructions
Prepare the Lasagna Noodles:
- Boil the lasagna noodles according to package instructions.
- Drain and transfer the noodles to cold water to stop the cooking process. Set aside.
Cook the Sausages:
- In a medium sauté pan over medium heat, cook the Italian sausages and bratwurst, using a spatula to crumble the sausage.
- Once fully cooked, remove the sausage from the pan and transfer it to a medium-sized bowl.
Prepare the Spinach Mixture:
- In the same sauté pan, add the olive oil, minced garlic, and frozen spinach.
- Sauté until the spinach is completely defrosted and reduced. Set aside.
Preheat and Prep the Baking Dish:
- Preheat the oven to 350°F (175°C).
- Lightly coat the bottom of a 9×9 baking dish with some pasta sauce.
Assemble the Lasagna Roll-Ups:
- Lay out the cooked lasagna noodles flat.
- Spread approximately 3 tablespoons of the sautéed spinach, 2 tablespoons of the cooked sausage mixture, 2 tablespoons of pasta sauce, and 2 tablespoons of mozzarella cheese onto each lasagna sheet.
- Carefully roll up the lasagna sheets, securing the filling inside. Place them vertically in the prepared baking dish.
- Repeat this process for the remaining lasagna sheets.
Bake the Lasagna Roll-Ups:
- Spoon some of the remaining pasta sauce between the lasagna roll-ups to prevent sticking.
- Pour additional sauce over the top of the roll-ups and cover the dish with foil.
- Bake in the preheated oven for 20 minutes.
- Remove the foil and sprinkle the remaining mozzarella cheese over the top.
- Bake for an additional 10 minutes or until the cheese is fully melted and bubbly.
Serve:
- Once done, remove the lasagna roll-ups from the oven.
- Allow them to cool for a few minutes before serving.
