S’mores Cookies

This classic treat made with toasted marshmallows, graham crackers, and chocolate has been a staple of American camping trips and backyard barbecues for generations. Even just the thought of it can transport you back to warm summer nights spent around a campfire, laughing with friends and family.
But what about when you can't get outside to enjoy a fire? That's where these s'mores cookies come in. With all the same classic flavors of a traditional s'more, these cookies are the perfect way to bring that summertime feeling indoors. One bite and you'll be reminded of roasting marshmallows over an open flame, feeling the warmth of the fire on your skin, and sharing stories and laughter with loved ones.

Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup white granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup mini marshmallows
  • 1 cup crushed Graham crackers approx 7 crackers
  • 2 Hershey dark chocolate bars broken into small pieces

Instructions
 

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream the butter and sugar together until light and fluffy.
  • Add the eggs and vanilla extract, and mix until well combined.
  • In a separate mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Gradually mix the dry ingredients into the wet ingredients until a dough forms.
  • Fold in the chocolate chips, mini marshmallows, and crushed Graham crackers.
  • Scoop the dough using a cookie scoop or tablespoon onto the prepared baking sheet leaving about 2 inches between each cookie. Press a Hershey chocolate bar piece into the top of the dough.
  • Bake for 10-12 minutes or until the edges are lightly golden.
  • Remove from the oven and allow to cool on the baking sheet for 5 minutes.
  • Transfer the cookies to a wire rack to cool completely

Notes

This recipe will make between 12-24 cookies depending on how large you make them.  Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. This will allow the marshmallows to set and prevent them from melting and sticking to the wire rack. It will also help the cookies to hold their shape and prevent them from breaking apart
