Cedar Plank Teriyaki Salmon

With this recipe, I have put a twist on the classic cedar plank salmon by adding an incredibly simple homemade teriyaki sauce. It includes mirin, a sweet rice wine that is a staple in Japanese cooking. It can be found in the international aisle of your grocery store, resembles vinegar, and usually comes in a clear bottle with a red lid.

Equipment

  • Cedar plank Soaked in water at least 1 hour

Ingredients
  

  • cup mirin also sold as Aji-Mirin
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon sugar
  • 1 navel orange
  • 2 scallions white and green parts
  • 4 6-ounce salmon fillets

Instructions
 

  • Preheat the grill to medium-high heat (400°F) for direct heat cooking by lighting the heat source (or piling coals) in the spot that will be directly under the food. 2. In a small saucepan on the stovetop over low heat, combine the mirin, soy sauce, and sugar and simmer for 10 minutes, stirring often, until the sauce reduces and thickens. Remove the sauce from the heat.
  • Slice the orange into eight ¼-inch rings with the peel intact. Trim off the root end of the scallions and cut them on the bias into 1-inch pieces.
  • Place the orange slices on the cedar plank two by two for the entire length of the plank. Place the salmon fillets on the orange slices. Brush half the teriyaki sauce onto the salmon and top with the scallion.
  • Place the cedar plank on the grill and close the lid. Cook for about 10 minutes until the fish flakes easily with a fork.
  • Remove the salmon from the grill and enjoy drizzled with the remaining teriyaki sauce.

Notes

EZ BBQ TIP: If you like, you can use a store-bought teriyaki sauce instead of making your own. Look for one made with minimal ingredients, especially preservatives, which impart a bitter saltiness that can overwhelm the delicate flavor of salmon.
