Brisket Cheeseburger
Ingredients
- 2 pounds brisket trimmings
- 2 Tablespoons Revolution Barbecue Texas Beef BBQ Rub
- 6 slices sharp cheddar cheese
- 6 burger buns
- 1 red onion sliced
- ¼ cup pickled jalapenos
- burger toppings like lettuce, tomato, pickles, and mayo on these burgers
Instructions
- Ensure both the brisket trimmings and the meat grinder are really cold. Place the grinder parts in the freezer if possible.
- Grind the brisket trimmings in a meat grinder. Start with the larger grind, then run them through a smaller grinder.
- Form the ground brisket into 6 equal-sized patties, about ⅓ pound each. If you don’t have a meat grinder, your local butcher can grind the meat for you.
- Preheat your smoker to 225°F using your favorite hardwood for brisket. A mix of oak and cherry is recommended.
- Season both sides of the beef patties with the Revolution Barbecue Texas Beef BBQ Rub.
- Place the seasoned brisket patties on the grill grates of the preheated smoker. Close the lid and smoke for approximately 1 hour, or until the burger’s internal temperature reaches 135°F.
- Top each ground brisket patty with a slice of sharp cheddar cheese. Close the lid and continue smoking until the meat reaches your desired internal doneness and the cheese is melted.
- Toast the buns if desired, then place the brisket burger on the bottom bun.
- Top with sliced onions, pickled jalapenos, and any other desired toppings.
- Add the top toasted bun and serve.
