Grilled Coulotte Steaks
Ingredients
- 2 Coulotte steaks approximately 12 ounces each
- 2 teaspoons Revolution Barbecue Texas Beef BBQ Rub divided
- 2 teaspoons Revolution Barbecue Blak Seasoning divided
- 2 teaspoons High heat neutral oil avocado or grapeseed
Instructions
- Coat the Coulotte steaks with the neutral oil and sprinkle 1 teaspoon each of Revolution Barbecue Texas Beef BBQ Rub and Blak Seasoning evenly over both sides of the steaks.
- Preheat the grill for two-zone/indirect grilling, with one side hot and the other side cool. Ensure that the temperature at the grill grates on the hot side is above 500°F (260°C).
- Place the seasoned steaks on the hot side of the grill and allow them to sear for 2-3 minutes without moving them.
- Flip the steaks and let them sear on the other side for another 2-3 minutes.
- Flip the steaks back over and rotate them 45 degrees to achieve the desired cross-hatch grill marks.
- After another 2-3 minutes, flip and rotate the steaks again to complete the cross-hatch grill marks on the second side.
- The steaks will be rare after searing. If you prefer your Coulotte steaks cooked more than rare, move them to the side with no direct heat and close the lid to bake them to your desired doneness. Remember, Coulotte steaks are best served no more than medium or they may become tough.
- Remove the Coulotte steaks from the grill and let them rest for 3-5 minutes to allow the juices to redistribute.
